I know I have been filled with boring information lately... I promise that this week I will update it with pictures of the guest room and how things are going with Nick, Caden, Bailey, and me! For now, enjoy this amazing cookie recipe and trick to take any recipe involving chocolate chips to the next level of deliciousness!
So, a little background story... when I married Nick there were many recipes that his mother and father used to make him that he LOVES... wait its food.. that's right, Nick loves all food... but these are at the top of his love list! So, I have tried about six different chocolate chip oatmeal recipes until I found this one... I highly suggest making them!
Nick's Favorite Chocolate Chip Oatmeal Cookies:
- 2 sticks of butter ... Hey, I didn't say they were healthy!
- 1 1/4 cups packed brown sugar... packed is key!
- 3/4 cup granulated sugar
- 2 tsp. vanilla extract
- 2 large eggs
- 1 1/2 cups flour
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 3 cups old-fashioned oats
- 2 cups chocolate chips
I suggest getting Target's Market Pantry Old Fashioned Oats (the recipe actually came from their container... I never said I was genius!) The key to making the chocolate chip part good is using 1/2 Ghiradelli Semi-sweet Chocolate Chips and 1/2 Ghiradelli Cacao Bittersweet Chips. I have to give my friend Alexis credit for turning me on to the Cacao!!!!
Directions:
1. Heat oven to 350 degrees
2. Beat butter, sugars, and vanilla until creamy, then beat in eggs until light and fluffy
3. Mix in flour, baking powder and salt (I still use the mixer)
4. Make 2 inch dough balls and place on cookie sheet
5. Bake 16-18 minutes.. just watch them until you think they are done :) and let them cool on a wire rack!.
6. To officially make them Nick's favorite cookie... freeze them and eat them cold! I know he is one of a kind, but they are REALLY good frozen!
